5 Fall Crockpots you don't want to miss out on this season


Normally, when I have read blog post for recipes, they often begin with a long story, and you have to scroll all the way to the bottom to get the recipe. Honestly, I usually don't read those. Nevertheless, I contemplated writing one in that style since that is typically how I have seen it done, but instead I decided to share five of my favorite fall recipes into one post. If you like the other style better and want me to write it that way, please reach out and let me know. I genuinely do appreciate any and all helpful feedback. I include helpful because one time I posted a video on YouTube and multiple people asked about what was in my armpit. *Facepalm* it was a bandaid and not at all relevant to anything.

Anyway, let's move on to my favorite crockpot meals. We make this first one multiple times of year. It's Taco Soup. Andrew's mom made this for him many times before I ever tried it. She told me she was at The Sewing Center (a local shop where you can purchase sewing supplies, take sewing classes, etc.) when a woman was there heating up her lunch. It smelled so good, Andrew's mom had to ask the woman for the recipe, so she shared it with Andrew's mom. Even though it's not a family recipe from his childhood passed down, it is delicious.


Taco Soup Recipe

Ingredients:

  • 1 28 oz can tomato sauce

  • 1 28 oz can diced tomatoes

  • 1 15 oz can black beans

  • 1/2 bag (20-22 oz bag) sautéed peppers and onions mix

  • 1 12oz frozen bag mixed veggies (corn, peas, green beans, carrots)

  • 1 lb ground beef, browned.

  • Taco Seasoning


Combine all of the ingredients in a crockpot, put on a thin layer of taco seasoning over entire surface, mix in, repeat once, then put on low for 6+ hours.

Serve with tortilla chips, shredded cheese and sour cream.

  • Another serving suggestion is grilled cheese, can be made with pepper Jack cheese for some extra kick.

  • Cornbread

  • Frito Party Scoops

  • Hot Sauce

  • Southwest Dip



Next up is Chili. I know everyone and their mom has a different recipe for this, but here's mine. I love Chili, it's so versatile, and we can make a huge pot and pair it with various sides like cornbread, grilled cheese, baked potatoes, chili dogs, and more.


Chili Recipe Ingredients:

  • 1 28 oz can tomato sauce

  • 1 28 oz can diced tomatoes

  • 1 15-15.5 oz cans light red kidney beans

  • 1 15-15.5 oz cans dark red kidney beans

  • 1 15 oz can black beans

  • 1/2 bag (20-22 oz bag) sautéed peppers and onions mix

  • 1 lb ground beef, browned

  • 1 Packet of Chili Seasoning of your choice

  • Mix put it all in crock pot on low for 6+ hours.

  • Serve with Fritos scoops, shredded cheddar and sour cream

Mix all the ingredients and place them in a crockpot on low for 6+ hours. Serve with Fritos scoops, shredded cheddar, and sour cream.

  • Another serving suggestion is grilled cheese, can be made with pepper Jack cheese for some extra kick.

  • Cornbread

  • Tortilla Chips

  • Hot Sauce

  • Southwest Dip


Next up is Pot Roast. Sometimes we eat it in a bowl, sometimes we spoon it over baked or mashed potatoes, or even other times over bread, it's so good! We once had it at a restaurant served over pancakes. (Not this exact recipe but it was a similar experience and very good.)


Pot Roast Recipe

Ingredients:

  • 3-4lb Chuck Roast, Browned

  • Carrots

  • Celery

  • Red Potatoes

  • Gravy Mix


Lightly salt and pepper each side of the chuck roast, brown with butter. You can use different seasonings or oil, this is just what I use and prefer. Once browned, place roast into crockpot including any remaining butter or browned bits. Cook on low for 6+ hours. Add veggies 1-2 hours before serving.



Mississippi Mud Pot Roast is a simplified variation on the classic pot roast. I felt so frustrated about meal planning one afternoon, and while talking it out with a co-worker, she shared this recipe with me. Since then, I have made it more times than I can count, and it's definitely a fall favorite.

Mississippi Mud Pot Roast Recipe

Ingredients:

  • 3-4lb Chuck Roast, Browned

  • 3-4 Pepperoncinis

  • Au Jus Seasoning mixed with water

  • 1 packet of ranch seasoning

  • 1 stick of unsalted butter


Lightly salt and pepper each side of the chuck roast, brown with butter. You can use different seasonings or oil, this is just what I use and prefer. Once brown place roast into crockpot including any remaining butter or browned bits.

Next, I take the packet of Au Jus Seasoning and mix (per the instructions on the back of packet) with three cups of water. I pour that mixture over the chuck roast.

Next I pour the ranch season packet powder over the roast, place a stick of butter on top and then add 3-4 pepperoncinis to the crockpot.

Then, cook on low for 8 hours or until meat easily falls apart.


*If you use salted butter, consider using less salt on the meat when you cook it so the whole dish isn't too salty.


Honestly, I don't make a lot of crock pot recipes with chicken, I have no idea why but this is my favorite crockpot meal to make with chicken. There are definitely a few I hope to try but I'll save those for a different post.


White Chicken Chili Recipe

Ingredients

  • 1 15oz can of white Cannellini Beans

  • 1 15 oz can Chili Beans

  • 1 15 oz can of corn

  • 1 diced potato

  • 1 4 oz small can of green chilis

  • 1/2 cup medium salsa

  • 1/2 cup cream cheese softened (save for last)

  • 2 cups chicken stock

  • 1/2 stick of butter

  • 1 tablespoon four

  • 3 chicken breast shredded

  • Cumin, onion powder, garlic powder, paprika, salt and pepper


Sauté peppers and onions in butter. Cook chicken, shred it, toss everything into crockpot. Add season and the rest of the ingredients except the cream cheese. Cook on low for 8 hours.

Before serving it add in the cream cheese mix until it is good and melted.


This fall season, I'm ready for these fall crockpots, the weather is getting cooler and the days are just getting busier. One of the best things about these recipes, besides how good they are, is how easy they are to make. Andrew or I (usually Andrew) will get the meat started and sauté the peppers and onions, and I (or Andrew) will dump the rest of the ingredients in the crockpot. Between the comfort of these soups, and the convenience of having dinner ready when we get home I am genuinely so excited about these recipes! Which are you going to try? Let me know.
